Ramos Gin Fizz

photograph by Antoine Bootz This frothy, refreshing tall cocktail was invented by New Orleans bar owner Henry Ramos in 1888. It became popular in the city, and was flamboyant Louisiana governor Huey Long’s favorite drink. In 1935, the Fairmont Hotel, then called the Roosevelt, trademarked the cocktail. Tony Ortiz, who mixes drinks at the Fairmont’s Sazerac Bar, makes a Ramos Gin Fizz like this: Combine 3 dashes fresh lemon juice, 2 dashes fresh lime juice, 3 dashes orange flower water, 1 1/4 oz. dry gin (Ortiz uses Gordon’s), about a quarter of the white from one egg, 1 tbsp. powdered sugar, and 3 oz. milk with plenty of ice in a cocktail shaker. Shake very well and strain into a cocktail tumbler.
